Healthy American Pancake believe it or not!

Hi Free divers.

My fantastic love of my life, surprised me the other day by serving me the best and most healthy fluffy American Pancake ever!!! Yes you heard right!

No chemicals, no sugar, no wheat flour, no gluten etc. Therese even served them with whipped soya cream, raw chocolate spread made from raw cacao, avocado, dates and some raw agave syrup and some raspberries! It was an fantastic experience, which I wanna share with you guys!

From Therese Nilsson to all of you guys;

Fluffy buckwheat pancakes

2 1/2 cup buckwheat flour

1 teaspoon baking powder
1/2 tsp vanilla powder (not vanilla, unless you want to of course)
1 teaspoon ground cardamom
a pinch of salt
a pinch of stevia if you want to
1 egg
2 1/2 cups almond milk

Accessories:
soy cream / coconut cream
Different kind of wild berries as accessories

Raw chocolat spreads
 
0.5 cups fresh dates
0.5 cups water
juice of an orange wedge
2 tablespoons agavesirap
0.5 tsp vanilla powder
1 to 1.5 cups avocado
0.5 dl cocoa or carob (or half of each)

First Combine dates, water, honey / agave, juice of one orange clove and vanilla to a soft touch in the food processor

2nd Add the avocado and cocoa / carob. Drive to a creamy consistency. (stay where o occasionally scraping down the sides)

If you want the solver, one can add another couple of tablespoons of water.

Store in a sealed jar. Keeps about 3 days in the refrigerator and 2 weeks in the freezer

Share the yolk from the white. Beat the whites fluffy. Mix the dry ingredients and then add milk and eggs, fold gently into the egg white. Let rest for a while. Fry in butter / oil.
